If it's too hot outside for soup, then you should try this refreshing gazpacho instead. Cucumber, bell peppers and yellow tomatoes combine to provide a tasty refreshment on super-hot days. The soup is rounded off nicely with herbs from Kotányi's Greek herbs mill.
Ingredients 4 Portions
Finely dice all the ingredients then garnish with the spices.
Mix thoroughly and add to the blender. Then blend until smooth.
Chill in the fridge for around 20 minutes.
