Yellow Greek-Style Gazpacho

If it's too hot outside for soup, then you should try this refreshing gazpacho instead. Cucumber, bell peppers and yellow tomatoes combine to provide a tasty refreshment on super-hot days. The soup is rounded off nicely with herbs from Kotányi's Greek herbs mill.

Ingredients 4 Portions

  • 225 gYellow bell pepper
  • 125 gYellow tomatoes
  • 125 gCucumber
  • 1 pieceGarlic clove
  • 2 tbsp.Olive oil
  • 1 pieceLime, juiced
  • 2 tsp.Sea Salt, Coarse
  • 1 tbsp.Greek Herbs

Preparation

    Finely dice all the ingredients then garnish with the spices.

    Mix thoroughly and add to the blender. Then blend until smooth.

    Chill in the fridge for around 20 minutes.
