Nigella is an essential ingredient in Oriental and Asian cooking. Its nutty, slightly sweet and bitter flavor works wonderfully in curries, baked goods such as naan bread, sauces and cheese, as well as dishes with pulses, pumpkin or eggplant.
Roasting nigella
Nigella should be roasted before use (either in a dry pan or in oil) to get the full, wonderful flavor. You can then add the seeds to your dish — ground, pounded in a pestle and mortar, or whole, depending on your personal preference.
