Mix the Kotányi spices and vanilla sugar into the mascarpone to taste.
Place the first waffle on a plate or dish and spread the mascarpone mixture on top.
Stack another waffle on top and spread on more of the mixture. Repeat this process until all the waffles are stacked. Be sure that there's enough of the mixture left for the top layer!
Spread the remaining mascarpone mixture on the finished waffle cake and decorate with the fresh berries.
Chill in the fridge for at least one hour before serving.
