Veggie Burger with Apple and Dates

Meat is no longer a necessity when it comes to burgers! This one is even vegan: The patty is made from zucchini, potatoes, green beans and corn. Combined with sweet dates and acidic apple, which contrast beautifully with the hearty patty, this burger is sure to be a hit!

Preparation

    Peel and grate the potatoes, then season them with salt and leave to rest for a short time. Peel and finely chop the onion and garlic. Wash the zucchini, cut it in half lengthways, remove the pulp and finely grate. If using fresh green beans, cut the ends off. If using frozen green beans, thaw and cut into approx. 1-cm pieces.

    Firmly squeeze the potatoes so that all the liquid comes out. Heat 3 tbsp. of oil in a pan, add the onion and garlic and fry. Add the zucchini, potatoes, green beans and corn and fry for a few minutes. Add Kotányi Turmeric seasoning mix to the pan and fry for a couple of seconds. Remove from the heat immediately and allow to cool. Add the flour and rolled oats and season with salt.

    Remove the core from the apple and the stones from the dates and finely slice.

    Shape the burger mixture into large equal-sized patties and fry in a second pan of oil on both sides until golden brown. Also fry the sliced apple and dates in the pan on all sides for around one minute.

    Mix the ketchup, soy sauce, cinnamon, ginger and chili (optional) to make the sauce. Roughly chop the cashews. Wash the salad leaves.

    Cut open the multi-seed rolls. Coat the base with the sauce and place a salad leaf on top. Place a burger patty on top and top with the fried slices of apple and dates. Sprinkle the cashews on top, place the top of the roll on the burger and serve.
