

Truffles with Chocolate Orange and Vanilla
20—30 MinAll Christmas baking ought to include these truffles. Although the term "baking" is a bit of a stretch here, as of course, these truffles don't need to be baked! They can be prepared a long time in advance as they keep for up to a month once cooled.

Ingredients 4 Portions
- 150 gButter
- 150 gCaster sugar
- 1 tbsp.Orange peel, grated
- 400 gCooking chocolate
- 100 gAlmonds, ground
- 200 gCocoa
- 2 pkg.Bourbon Vanilla Sugar
- 1 tsp.Nutmeg, Ground

Remove the butter from the fridge and allow it to soften.

Meanwhile, melt the chocolate in a bain-marie.

Use a blender to grind the ground almonds until they are even finer and lightly toast in a dry pan.

Mix the room-temperature butter with the almonds, melted chocolate, spices and orange zest until smooth.

Shape into balls around 2–3 cm in diameter, roll in the cocoa and enjoy. The truffles can be stored in the fridge for up to one month.
