Juicy Tofu Skewers with Peanut Sauce

These tofu skewers are fried with our Veggy Exotic mix, giving this dish a special aromatic flavor. You'll love this refined blend of turmeric, Ceylon cinnamon, mango, ginger and nigella. Topped with a peanut sauce that's out of this world, this meal is truly a vegetarian masterpiece.

Ingredients 4 Portions

  • For the tofu skewers

  • For the peanut sauce

    • 70 gPeanut puree
    • 1 tbsp.Hoisin sauce
    • 1 tbsp.Soy sauce
    • 1 tbsp.Agave syrup
    • 1 tsp.Yellow curry paste
    • 40 mlCoconut milk
  • For the cucumber salad

    • 1 Cucumber
    • 1 tsp.Sesame oil, toasted
    • 1 tbsp.Soy sauce
    • 1 tsp.Sambal oelek
    • 2 Limes
    • 1 tbsp.Sesame seeds

Preparation

    To make the peanut sauce: Put all the ingredients in a blender until finely pureed and put to one side.

    Boil the basmati rice in a pan according to the instructions on the packaging.

    To make the cucumber salad: Peel and dice the cucumber. Mixed the diced cucumber in a bowl with the sesame oil, soy sauce sambal oelek, then chill in the fridge.

    Dice the tofu. Place the diced tofu in a bowl and cover it with the Veggy Exotic seasoning mix. Slide the diced tofu onto wooden skewers.

    Heat the oil in a coated pan and fry the tofu skewers on all sides for 6 minutes.

    Divide the basmati rice up into 4 bowls. Add the tofu skewers and top with peanut sauce and sesame.

    Add the cucumber salad, serve with half a lime and enjoy.
