Spelt rice is an alternative to the conventional rice varieties that comes from Asia and contains six times as much fiber and twice as much protein. It's ideal as an accompaniment to these stuffed bell peppers with creamy tofu and our Turmeric with Chili, Cardamom & More seasoning mix.

Ingredients 4 Portions
Peel and finely chop the onion and garlic. Dice the tofu into 2x2-cm pieces. Drain the corn. Prepare the spelt rice according to the instructions on the packaging.
Sear the tofu in a pan with 2 tbsp. of sesame oil and put to one side. Fry the oil and garlic in the same pan. Add a little more oil if necessary.
Add the Turmeric seasoning mix to the pan and fry for a couple of seconds. Use the coconut milk to deglaze the pan immediately. Add the corn and allow to simmer gently. Season to taste with the soy sauce.
Cut the bell pepper in half, remove the core and sear on both sides in a little oil. Season the seared halves of bell pepper with salt and stuff with the creamy tofu.
Dish the stuffed bell pepper up with the spelt rice and garnish with white sesame seeds.
