Spicy Mango and Avocado Wraps

This DIY meal is a fantastic dish to prepare for a party. Everyone can sit at the table and make their own wrap using whichever tasty ingredients take their fancy. Any leftover ingredients can be rolled into a wrap and taken to work for lunch the next day.

Ingredients 4 Portions

  • 2 pieceAvocados
  • 1 pieceMango
  • 1 pieceRomaine lettuce
  • 1 pieceRed bell pepper
  • 1 pieceOnion
  • 3 tbsp.Sesame oil
  • 1 tsp.Tomato puree
  • 150 mlCoconut milk
  • 4 pieceWraps
  • 30 gCashews
  • 1 pkg.Veggy Hot+Spicy Seasoning Mix

Preparation

    Wash the bell pepper, peel the avocados and mango, remove the pits/stone and cut the flesh into strips. Also cut the lettuce into strips.

    Peel and finely dice the onion. Heat the oil in a pan and fry the onion. Briefly fry the Veggy Hot + Spicy mix and the tomato puree, add the coconut milk, then bring to the boil and leave to reduce for around 10 minutes until a smooth cream is formed.

    Meanwhile, fry the strips of bell pepper and cashews in another pan.

    Then coat the wraps with the creamy mixture. Add the salad and the strips of mango and avocado. Finally arrange the strips of bell pepper and cashews on the wraps, roll up and enjoy.
