

Potato Fritters with Roasted Vegetables and Sour Cream

Ingredients 2 Portions
For the potato fritters
- 4 Potatoes, waxy
- 1 Onion, small
- 4 tbsp.All-purpose flour
- 4 tbsp.Vegetable oil
- 2 tbsp.Veggy Classic Seasoning Mix
For the baked vegetables
- 1 Zucchini, small
- 1 Bell pepper
- 1 Onion
- 1 Handful of cocktail tomatoes
- 2 tbsp.Olive oil
- 2 tbsp.Veggy Classic Seasoning Mix
For the sour cream
- 200 gSour cream
- 2 tbsp.Greek yogurt
- 1 Garlic clove
- 1 pinchSea Salt, Coarse
- 1 pinchPepper Black, Whole

To make the potato fritters: First, peel and roughly grate the potatoes. Use paper towels to squeeze any excess liquid out of the potatoes.

Peel the onion and chop it as finely as possible, then place it in a large bowl with the grated potatoes. Add the flour and Veggy Classic mix. Combine all of the ingredients thoroughly by hand and leave the mixture to infuse for a few minutes.

Meanwhile, heat the oil in a pan.

Shape the potato mixture into fritters, add to the hot pan and press down flat again. Sear for a few minutes and turn until they are golden brown on both sides.

Preheat the oven to 200 °C (356°F).

Cut the vegetables into large pieces and lightly prick the tomatoes. Spread the vegetables over a baking tray, sprinkle over the Veggy Classic mix and olive oil and mix thoroughly by hand so that everything is evenly covered with the spices and oil. Now roast for 20 minutes at 200°C (392°F) using the conventional oven setting

Mix the sour cream and yogurt in a bowl. Use a garlic press to crush the garlic and add to the yogurt and sour cream.

Season the potato fritters and roasted vegetables to taste with sea salt and ground pepper. Serve with the sour cream and enjoy.
