Lentil Spread with Sesame and Dates

This spread is made from its wonderfully exotic ingredients and can be enjoyed as a dip or spread on flatbread. Our Veggy Exotic seasoning creation featuring turmeric, mango, Ceylon cinnamon, coriander and ginger adds a whole new depth of flavor to this finely pureed spread, bringing a breath of fresh air into your kitchen.

Ingredients 4 Portions

  • 50 gWhite sesame seeds
  • 100 gLentils
  • 1 Cup of vegetable stock, clear
  • 1 pieceRed chili pepper, small
  • 6 pieceDates, pitted
  • 1 pieceOnion
  • 50 mlWater
  • 10 mlSesame oil
  • 1 pieceRed bell pepper
  • 2 tbsp.Soy sauce
  • 2 tbsp.Lemon juice
  • 1 pkg.Veggy Exotic Seasoning Mix

Preparation

    Wash the lentils and leave to simmer in the vegetable stock for around 10–15 minutes, then drain. Meanwhile toast the sesame seeds in a dry pan until they give off the distinctive smell of roasting, then allow to cool.

    Finely chop the chili, bell pepper and onion then use another pan to sweat these in hot oil along with the Veggy Exotic mix. Allow to cool. Cut the dates into small pieces and add to the vegetables.

    Puree the lentils along with the sesame seeds, water and sesame oil. If the consistency is too thick, simply add a little more sesame oil or water.

    Then mix the seasoned vegetables and dates into the lentil puree. Season with soy sauce and salt to taste. To serve, drizzle the lemon juice over the spread and enjoy.
