Exotic Couscous Salad with Mint

This dish is truly something special — it's worth its weight in gold! The combination of fluffy couscous with our Veggy Exotic mix, vegetables, a healthy dose of mint and parsley is simply irresistible. It's incredibly easy to make and so tasty. Our Veggy Exotic mix lends the dish its wonderfully exotic flavor.

Ingredients 4 Portions

  • 220 gCouscous
  • 1 pieceRed bell pepper
  • 1 pieceLeek
  • 5 pieceTomatoes
  • 1 pieceCucumber
  • 4 tsp.Olive oil
  • 80 gRaisins
  • 30 gPine nuts
  • 30 gSunflower seeds
  • 1 Bunch of fresh mint
  • 1 Bunch of fresh parsley
  • 1 pinchPepper Black, Whole
  • 1 pkg.Veggy Exotic Seasoning Mix
  • For the dressing

    • 1 tsp.Tomato puree
    • 3 tsp.Honey
    • 1 tsp.Mustard
    • 2 tbsp.Lemon juice

Preparation

    Prepare the couscous according to the instructions on the packaging and leave to cool.

    Meanwhile, dice the bell pepper, leek, tomatoes and cucumber into bite-sized pieces and mix into the cold couscous. Heat the olive oil and briefly fry the Veggy Exotic mix to allow the flavor to develop. Mix with the couscous, stir well and season with black pepper.

    Soak the raisins in water for a short time. Roughly chop the mint and parsley.

    Lightly toast the pine nuts and sunflower seeds in a dry pan, then toss through the salad with the raisins, mint and parsley.

    To make the dressing: Mix the ingredients indicated, add to the salad and enjoy.
