

Cantaloupe Salad with Feta and a Lemon and Mint Sauce

Topped with feta and peppermint leaves, it will be the star of any cookout. Those who love their food hot can also add some fire to meat-free dishes with our Veggy Hot + Spicy mix.
Ingredients 4 Portions
- 2 pieceCantaloupes, ripe
- 200 gFeta
- 20 mlWater
- 4 tbsp.Honey
- 10 piecePeppermint leaves
- 6 tbsp.Olive oil
- 2 pieceOrganic lemons (grated zest and juice)
- 1 pkg.Veggy Hot+Spicy Seasoning Mix
- 1 pinchSea Salt, Coarse
Preparation

Add the water, lemon zest and juice, honey and Veggy Hot+Spicy mix to a pan, bring to the boil, then allow to cool.

Mix the roughly chopped peppermint into the cold sauce. Cut the cantaloupes into thin slices and cut the feta into pieces.

Mix the lemon sauce with the olive oil and use this to dress the melon slices and feta. Allow to rest for 30 minutes. Season with salt to taste and enjoy.
