Aniseed-flavoured apricots with puff pastry strudel

Ingredients / shopping list:

  • 500 g apricots, halved and pitted
  • 1 roll puff pastry
  • 3 tablespoons ground almonds
  • 1 tablespoon icing sugar
  • 1 egg yolk for basting
  • ½ package lemon zest
  • Extracted paste of 1 bourbon vanilla bean
  • 1 teaspoon pounded aniseed, whole anise seeds for sprinkling onto the pastry

Ingredients for the apricot sauce (alternatively: ready-made apricot sauce):

  • 200 g pitted apricots, cut into small pieces
  • 40 g granulated sugar
  • 4 tablespoons water
  • 1 cl apricot liqueur

Mix apricots with the extracted paste of the bourbon vanilla bean, lemon zest, pounded aniseed and almonds, add sugar. Unroll the puff pastry, baste the edges with some egg yolk and spread the filling onto the pastry. Roll to form a strudel and place onto a lined cookie sheet. Baste the strudel with the remaining egg yolk, sprinkle with the whole anise seeds and bake in the oven at 200 °C for approx. 30 minutes. Allow strudel to cool off briefly.

Simmer the apricots with granulated sugar and 4 tablespoons of water for 8 minutes and strain. Season to taste with apricot liqueur. Cut the strudel into pieces and serve with apricot sauce.
