The importance of spices has changed greatly over the centuries. They have been extremely expensive in the past (refer to history). They were particularly highly valued for their medicinal powers and were taken in large quantities. Today, it is normal to find a well-equipped spice rack in the kitchen and even treasures such as saffron and vanilla are affordable. Spices contain some active ingredients that also have a beneficial effect in small quantities. However, they are usually used in order to provide dishes with the desired flavour.

We could naturally list the various health reasons why one should use anise or cinnamon, but firstly that is not the purpose of using these aromatic plant parts when a pinch can be used to complete a dish, and secondly there is an EU ordinance that prohibits making statements that have not been scientifically proven (Health Claims Ordinance).
